Ingredients
Empanada Dough:
300g flour
225g cold butter
2 tbsp sugar
3tbsp ice-cold water
Filling
250g ground beef
1 medium carrot, diced
1 medium potato, diced
1 onion, minced
3/4 cup Bibimbud Original Kimchi Sauce
Directions
Mix dough ingredients in a bowl until well combined. Knead onto a flat surface until smooth. Shape into a ball, wrap and rest in the fridge for at least 30 minutes
Cook the filling by sauteing onions, carrots, and potatoes. Make sure it’s tender before adding the ground beef and Bibimbud Original Kimchi Sauce. Cook for a few more minutes until excess liquid dried up.
Divide the dough into 12 pieces or roll it on a surface and cut circles using a mold. Put filling and a slice of cheese if desired. Fold and seal the edges.
Pan fry for 5 minutes or until golden. If using an oven, Place empanadas on a baking tray and brush with beaten egg—Bake at 180C for 15 minutes.
Serve warm
