Ingredients
1 cup Bibimbud
1 napa cabbage, sliced into bite-sized pieces
3 leeks, julienned
1 daikon, peeled and julienned
2 tbsps. water
2 tbsps. sesame seeds, toasted
Directions
Bring a pot of salted water to a rolling boil. While waiting, prepare an ice bath large enough to fit your cabbage.
Once the salted water is at a rolling boil, drop in cabbage and let cook until just slightly softened--about 1 minute. Remove and place in the ice bath immediately.
Drain cabbage, then combine with leeks and daikon. In a separate bowl, whisk together Bibimbud sauce and water.
Toss together vegetables, Bibimbud sauce and sesame seeds. Make sure vegetables are well-coated with the sauce. You may enjoy immediately, but letting it marinate overnight in the chiller is best.
